Ingredients:
1 Chicken, cut in pieces
¾ c Chicken broth
¾ c Sherry or white wine
1 pkg Artichoke hearts, frozen
3 Tomatoes, pealed, quartered
1 Onion, sliced thin
¼ lb. Mushrooms, trimmed, whole
Instructions:
- Roll chicken in flour. Brown in butter in electric frying pan.
- Add broth and wine. Cook 45 min.
- Add artichokes, tomatoes, onions, mushrooms to heat.
Serves: 3-4
This is good on rice. Thicken the remaining sauce with corn starch.
