Appetizers

A classic appetizer. It's quick and easy. It is best hot, but still good when it cools to room temperature.

Ingredients:

12 ounces Artichoke Hearts, Marinated
1 small Onion, chopped fine
4 Eggs
1/4 cup Bread Crumbs, fine
1/4 teaspoon Salt
1/8 teaspoon Pepper
1/8 teaspoon Oregano
1/8 teaspoon Tabasco
1/2 pound Sharp Cheddar Cheese, grated
2 tablespoons Parsley, minced

Directions:
Preheat oven to 325.

Drain one jar, (6oz.) of artichokes into frying pan and sauté onion.
Discard the oil from draining the other jar. Chop artichokes fine. Beat
eggs. Add rest of ingredients, onions and artichokes to egg mixture. Turn
into greased 7X11 pan. Bake at 325 for 30 minutes or until set. Let cool
then cut into squares. Serve cold or reheat at 325 for about 10 minutes.

Makes 6 dozen pieces.

Note: I use instant onions and do not sauté. May be frozen before reheating.
